INGREDIENTS

  • 10 medjool dates pitted

  • 1 cup dried apricots

  • 1/4 cup pistachios

  • 1/3 cup chia seeds

  • 1/2 cup shredded coconut (plus a little extra to roll the balls in)

  • 1 tbsp maple syrup

INSTRUCTIONS

  • Add all the energy ball ingredients to a food processor and pulse until it forms a sticky dough.

  • Use your hands to roll 1 tbsp sized balls, then roll each ball into some shredded coconut.

  • Pop the energy balls in the fridge to chill and set for at least 2 hours. Store in the fridge for up to 2 weeks, or in the freezer for up to 3 months.

NOTES

  • The pistachios can be subbed out for any nut, macadamia nuts also work very well.

  • If your mix is a little too sticky add a tablespoon or two of oats to the mixture.

  • To make it nut free use sunflower seeds instead of pistachios.
