Banana & Oat Breakfast Bars

These baked banana oatmeal bars are made with simple, wholesome ingredients and are easy to pull together in about 30 minutes. Play around with ingredients and find your favourite mix! These are great fresh out of the oven for breakfast, or as an afternoon snack.



INGREDIENTS


Base:

  • 2.5 cups (275 g) Rolled Oats

  • 2 tbsp (14 g) Ground Flax

  • 1/2 tsp Salt

  • 1 tsp Cinnamon

  • 1 cup (240 mL) Unsweetened Almond Milk (or any other plant-based milk)

  • 2 medium-sized Ripe Bananas, mashed

  • 1–2 tbsp Maple Syrup

Optional:

  • 5 Medjool Dates, finely chopped

  • Chocolate Chips

  • Blueberries

  • Coconut Flakes

  • Toasted Nuts

  • Peanut Butter

  • Raisins

  • Hemp Seeds

For this last batch I added dates, chocolate chips, blueberries and walnuts.


INSTRUCTIONS

  1. Pre-heat oven to 180 degrees C.

  2. Add the oats, flax, salt and cinnamon to a bowl and stir to combine.

  3. Mash the banana in a bowl using a fork

  4. Add the almond milk, banana, chocolate chips and dates to the oat mixture and stir into a thick batter.

  5. Taste the batter and if you feel like you want it a little sweeter, add 1-2 tbsp maple syrup.

  6. Line an approximately 7-8 inch square baking pan with parchment paper or give it a light spritz of non-stick cooking spray or use oven paper. Add the oat mixture to the pan and flatten out until even.

  7. Bake for 30 minutes


Store in a sealed container in the fridge for up to 1-week or freezer for up to 3 months.
