Bircher Muesli (The original overnight oats)

Enjoy a taste of Swiss tradition with this easy grated apple Bircher muesli—a delightful breakfast, perfect for busy mornings.


Like other overnight oat recipes, this requires minimal cooking and is best made ahead, ensuring a hassle-free grab-and-go breakfast.


Top it off with your favorite additions:

  • Nut butter (almond, peanut, or cashew; use sunflower seed butter for a nut-free option)

  • Toasted coconut flakes

  • Hemp seeds

  • Pepitas

  • Fruits, or fruit compote

Go Vegan: Easily adapt this recipe to be plant-based and vegan by opting for your preferred non-dairy milk or yogurt. Choose unsweetened and plain varieties for a healthier option without excess sugar.

INGREDIENTS


  • 1/2 cup rolled oats

  • 1/4 cup unsweetened nut milk (almond, coconute, soyetc.)

  • 1/2 cup Greek yoghurt 

  • 1 medium-sized apple (red or green)

  • 1/4 tsp cinnamon

  • 1 tbsp dried blueberries (or raisins)

  • Zest of 1/2 a lemon

  • Additional toppings (optional): peanut butter, coconut flakes, hemp seeds, pepitas, etc.


INSTRUCTIONS


  1. Chop apple in half. Grate half the apple and add to glass jar or bowl. Cover and keep the other half of the apple in the fridge to prevent browning; it will be chopped later to use as a topping.

  2. Add oats, yogurt, milk, dried blueberries, lemon zest, and cinnamon to the grated apple, stirring until mixed well.

  3. Cover and let ingredients soak in the fridge for 2 hours or overnight. The oats will soften and thicken.

  4. Once ready, chop the other half of the apple and add to Bircher muesli. Add other toppings as desired, such as nut butter, nuts, seeds, etc. Enjoy!
