Pistachio Date Bites

These delicious (and healthy) pistachio date bites are an easy grab-and-go snack or healthy dessert option! I can't stop eating them, they find their way into my breakfast, they pair perfectly with a coffee mid morning, and they hit the spot perfectly after lunch!


INGREDIENTS


1 cup medjool dates

1 cup roasted pistachios

120g chocolate


INSTRUCTIONS


If your dates are not soft soak them in warm water for 5 minutes.

Chop the dates into smaller pieces and add them and the pistachios to the bowl of your food processor

Process on high for 1-2 minutes

Check on the mixture and make sure that it sticks when pressed together (you can just use the back of a spoon), if not, give the mixture a whizz for another 30 seconds and check again.

Scoop the dough by heaping tablespoons, then roll between your hands to form balls. Arrange them on a baking sheet lined with parchment paper, then place in the fridge or freezer to set for at least 30 minutes.


Leave a little of the mixture to sprinkle on top.


Once the balls have set, melt your chocolate using a double boiler or bain marie.

One at a time, dip each ball into the melted chocolate and move it around to fully coat. Use a fork to place the balls back onto the parchment paper.

Sprinkle with the leftover crushed pistachio/ date mixture and flakey sea salt (optional).

Put the balls back into the fridge to set for at least 1 hour.


NOTES


If you have any left over chocolate and or pistachio date mixture, mix together, sprinkle a little salt into the mixture and pour onto parchement paper to make a chocolate bark.


Keep these stored in the fridge for a week to 10 days or in the freezer for up to a couple of months.
